INGREDIENTS
- 2 kg of peeled shrimp
- 1 kg of cassava mash (we find in Asian wholesalers frozen)
- 2 medium onions, chopped
- 500 g tomatoes, peeled, seeded and halved
- 2 c. chopped coriander
- 1 cup coconut milk
- 4 c. tablespoons of sunflower oil
- 4 c. tablespoons oil palm
- salt and pepper
PREPARATION

Brown the onions in sunflower oil. Add the tomatoes and simmer for a few minutes.

Then stir in the peeled shrimp and cilantro. Salt and pepper.

Reduce heat, cover and leave on low heat until shrimp are cooked.

Finally add the mashed cassava, coconut milk and palm oil.

Stir well and bring to boil. Add a little water if the sauce is too thick.

Remove from heat and serve immediately. Finally, with plain rice, a real treat!
