INGREDIENTS
- 2 egg yolks
 
- 125 g of butter in pieces
 
- juice of 1 lime
 
- salt and pepper
 
 
 
PREPARATION

Put in a bowl the egg yolks, lemon juice, salt and pepper and whisk.

Place the bowl over a pan of boiling water on the fire (water bath) and let thicken, stirring constantly with a whisk. 
3 
Add the butter in small quantities, gradually, whisking.
