INGREDIENTS

  • 2 egg yolks
  • 125 g of butter in pieces
  • juice of 1 lime
  • salt and pepper

 

PREPARATION

Put in a bowl the egg yolks, lemon juice, salt and pepper and whisk.

Place the bowl over a pan of boiling water on the fire (water bath) and let thicken, stirring constantly with a whisk.

Add the butter in small quantities, gradually, whisking.



TIPS


Serve with poached fish, asparagus and even other steamed vegetables.
