INGREDIENTS




  • tomato: 5
  • Zucchini: 4
  • Eggplant: 2
  • Green pepper: 1
  • red pepper: 1
  • Black Olive: 50 g
  • Garlic: 2 cloves
  • Onion: 1
  • Olive oil: 2 tbsp. soup
  • thyme, bay
  • salt and pepper



PREPARATION

Peel the garlic and onion and cut into pieces.

Wash all the vegetables, cut the aubergines and courgettes, tomatoes into wedges and the peppers into strips.

In a pot over high heat with olive oil, fry the onion, then add all the vegetables cut.

Salt and pepper, then add the garlic pieces and olives.

Reduce heat and simmer 35 min.

Ratatouille can be eaten hot or cold
