INGREDIENTS



  • 100 g wholemeal flour
  • 100 g of white flour
  • 150 g smoked salmon
  • 6 dl milk
  • 3 eggs
  • 250 g ricotta
  • 1 egg white
  • 100 g of sorrel
  • 60 g butter
  • salt and pepper



PREPARATION

In a bowl, sift the two flours. Add milk, beaten eggs and melted butter, stirring well. Cover the dough and let rest for 2 hours.

In a bowl, beat the ricotta with a fork, add the salmon, cut into small pieces and chopped sorrel.

In mixer, beat the egg whites and a pinch of salt until stiff and fold gently into the ricotta. Salt and pepper.

Cook the pancakes in a frying pan, place a little filling, roll them and cut them to make wraps.

Place on a platter and serve hot.
