INGREDIENTS



  • 1 tbsp curry powder (+ or-depending on your taste)
  • 1 tbsp oil
  • 1 can coconut milk (unsweetened)
  • 800 g of chicken
  • 2 tbsp soy sauce
  • 1 eggplant
  • pepper and other spices of your choice (I have put basil, chilli and curry)
  • 250 g of Thai rice



PREPARATION

Mix the curry with half the coconut milk, put in hot oil. Cut the chicken into pieces and add it.

Gradually pour the remaining coconut milk and stir until the chicken is cooked (about 30 minutes on low heat).

Cut the eggplant into pieces and add. Then stir in the soy sauce.

Add spices and / or herbs and cook for another few minutes.

For rice, cook it your way (cooking pilaf, Creole or water absorption, for my part it was due to water absorption). When cooked, add the previous preparation and mix well. It's ready!

A really delicious recipe to make asap! You can also replace the chicken with turkey or even fish.
